Tasting notes
This Old world style Estate Pinot Noir is a beautiful balance of red fruits and complex savoury spices. Raspberry, cranberry, hibiscus red licorice and bramble notes fill the mid pallet while vanilla and baking spices round out the finish. This is a complex wine exuding elegance and refinement.
Production notes
Grapes are carefully selected and handpicked from the Burdi Block. They are sorted and carefully and put onto the grape elevator to be gently crushed into a small fermentor. Fermentation for Pinot is a slightly lower temperature to preserve gentle and delicate phenolics.
Pinot does exceptionally well with being pumped over as punching down can lead to a mechanical breakdown of the skins which add too much astringency and tannin to a wine that excels at being much lighter. This wine completed malolactic fermentation in oak barrels and was aged for 36 months in Neutral oak.

FOOD & WINE PAIRING: This wine pairs exceptionally well with creamy cheeses and charcuterie meats. Lighter poultry or glazed pork are a fun dinner option.
